We went to Encinitas this past weekend and tried Betty’s Pie Whole for the first time. The restaurant had so much personality, the staff was helpful and genuine, and the sweet and savory items were AMAZEBALLS. They used real butter in their pastries – You could taste the quality in each bite. We can’t wait to go again!
Pictured above is their strawberry-rhubarb pie. So good!!

The days can get busy. And parents need to eat. I don’t always have the time nor want to expend the energy into making a meal for myself though. I used to spend $6.00 on a smoothie at the local juice place two times a week or more after the gym. Fortunately, I didn’t do that for very long because it is a costly habit. I tried several other smoothie recipes but they were either too sweet or not tasty enough to commit to.
Finally, I created a really great protein smoothie – low sugar -which I love. It may not be up your alley, but I wanted to share with you just in case. 🙂 Caution: Contains peanut butter. No dairy.
Mom’s Go-To Smoothie
- Choose your tumbler of choice
- Fill to the rim with ice
- Fill tumbler of ice with vanilla rice milk, unsweetened
- Pour into blender
- 2.5 tablespoons of organic peanut butter
- 1 banana
- 1 small squeeze of organic honey
- Premium choc chips, if so desired
This smoothie fills me up and there’s always a little bit left over in the blender for sharing or for refills. Let me know how you like the recipe. Feel free to post pics!
